Bolivia Alto Beni — Walikeewa Organic
About This Origin
Walikeewa is the local Aymara word for “improved” — and it says a lot about the philosophy behind this cacao. These beans come from a network of certified organic smallholder farming families spread across the Alto Beni region, with post-harvest processing handled at a centralized fermentation facility in the Palos Blancos area. The whole operation is built around consistency and quality improvement for small producers who wouldn’t otherwise have access to proper fermentation infrastructure.
What you’re tasting is the result of that collective effort — dozens of families, one shared standard, certified organic throughout.
As with many beans carrying Criollo influence, this cacao won’t knock you over with bold, assertive flavors. That’s not what it’s doing. It’s quieter than that — more focused on character than volume. The aroma opens with bold caramelized sweetness, and from there the profile settles into something woodier and more restrained. I find that kind of subtlety genuinely interesting to work with, and I hope you will too.
