This is a spray dried, whole butter milk powder that is a really interesting variation on classic milk chocolate. You might expect it to be sour but instead it adds extra depth of flavor that I find really satisfying.

Our Milk Chocolate Recipe works just fine with this Buttermilk powder. It gives full directions. If you use the following ratios (a little different from the recipe below), you can make a smaller, slightly different batch of 48% milk chocolate.
8 oz Roasted Cocoa nibs (16%)
16 oz Cocoa butter (32%)
8 oz Butter Milk powder (16%)
18 oz sugar (36%)
This Butter Milk Powder will also work quite nicely for a White Chocolate.
For those drinking this, 1 lb will make approximately 1 gallon of buttermilk. This also translates to about 1 oz or 3 T per 8 oz of water.
Finally, I was told the Canadian import tariff on powdered milk is 243%, if you are ordering from Canada, you may need to take that into account.
Buttermilk powder should be stored in a cool, dry place in a tightly sealed container, away from humidity and strong odors to prevent clumping and preserve flavor. Keep it out of direct sunlight and high temperatures to maintain its quality.
